Steve Wagner
President & Brewmaster
Appearance:
Clear, dark amber, and a good tan head.
Aroma:
Hoppy and fruity, with some sherry notes.
Flavor:
Dried and candied fruit flavors dominate, still some bitterness for balance and some hop flavor but only good signs of age…sherry flavors and alcohol.
Palate:
Big and full bodied with low carbonation.
Overall:
Aging well…where’s my cigar?!

Mitch Steele
Head Brewer
Appearance:
Deep amber, nice clarity, tan foam with red hues.
Aroma:
Caramel malt, raisins, very fruity and fruit esters – peaches?
Flavor:
Malty, caramel – an intense malt character. Alcoholic (still has some heat), with a somewhat sweet and nectar-like quality…intense sherry notes as well.
Palate:
Very full, hot, and substantial bitterness.
Overall:
Has a surprising kick for being over 2 years old!

Greg Koch
Chairman & CEO
Appearance:
Bright with deep reddish rust tones.
Aroma:
Hot and very single malt-ish. Slight oxidation leads to some sherry notes.
Flavor:

Bam, big impact right up front. Metallic tinge, but in its place.

Palate:
Earthiness and roundness in a huge flavor profile.
Overall:
Excellent.

Appearance:
Coppery brown (mahogany), big CO2, and nice resulting head.
Aroma:
Hops, malt, alcohol, bread/doughy, and dried fruit.
Flavor:
Fruit; raisins and plums, sweet, hints of port/brandy/sherry. The alcohol is there but not real big.
Palate:
Full body, and wraps the tongue like a hop-malt blanket that is sweet and warm.
Overall:
Oh yeah! What a great beer!!

Tom Garcia
Brewer
Appearance:
Clear, and coppery amber in color.
Aroma:
A hint of age (graceful age), Earth, and dried apricots and pineapple.
Flavor:
Earth, caramel, latent bitterness, and some bourbon.
Palate:
Full bodied with nice carbonation.
Overall:
Well balanced with not too much dissolved Oxygen in the taste.

Art Hogarth

Appearance:
Nice dark golden color with a hint of red, good head and carbonation, clear and bright.
Aroma:
Light malty smell.
Flavor:
Great malt flavor…sweet but subtle. Not as strong as I was expecting.
Palate:
Great carbonation and lingering sweetness.
Overall:
Great beer but not as rich or strong as I thought it would be.
