STONE BREWING WORLD BISTRO & GARDENS:
AMERICAN
HOMEBREWERS
ASSOCIATION
MEMBERSHIP RALLY!

THIS SATURDAY, SEPTEMBER 29th
NOON - 3PM
Charlie Papazian,
Founder of the AHA

Are you a homebrewer? Would you like to be one? There's no better time than now! You can meet and mingle with world class beer enthusiasts, try local homebrewed creations, take a tour of the brewery, sample beers at the bar, enter to win raffle prizes from the AHA and Stone, partake in great snacks -- and become a member of the American Homebrewers Association in the process! The Founder of the American Brewers Association, Charlie Papazian, will be there as well to meet with all you aspiring homebrewers. Many members of Team Stone will be on hand to visit with and give brewery tours to attendees, including Greg Koch, Steve Wagner, Mitch Steele, Chris Cochran, Bill Sherwood, Cecil Menasco, Charlie Scollard and Brandon Uhl.
As if that weren't enough..
In the spirit of hombrewing, Stone Headbrewer Mitch Steele invited eager homebrewers from across the southland on Sunday, July 8th into the brewhouse for a "brew along" on Stone's immaculate, state of the art, Bavarian made brew house. The resulting unfermented Stone Levitation Ale wort was then up for grabs to all participants who quickly carted it away in 10 and 20 gallon jugs to work their zymurgical magic on it. Once home, the brewers could subject it to endless possibilities: spicing it, lagering it, "Belgian-izing" it, etc. Now the results are in! With your membership you'll get to sample 35 unique creations and judge for yourself the measure of each homebrewer's talent by casting a ballot for your favorites. The Homebrewers are looking forward to sharing their creations and answering questions about the amazing variations they came up with. Here's a list of what you can expect...
Brewer Notes For Ten
Of The 35 Homebrewed Beers
You'll Get To Sample This Saturday!
1st running that I steeped Black Patent  and Chocolate malt in to make a Baltic Porter.
Alleviation Cherry Stout: Blend of cold and first wort, roast barley added to wort. Sweet and Sour cherries added to 2°
"Sour Levitation" First runnings off the lauter tun. Topped off water before boiling with centennial and styrian golding  @ flameout. OG: 1.069.  F.G . 1.020  Fermented with WLP 530 Abbey Ale yeast I believe. A definite sourness comes with this one.
Perturbation I: Kettle wort boiled down and fermented with Scottish Ale yeast
"AVH" Apricots vs. Hops. Cold wort. Added California Ale yeast and then 5 lbs of apricots after initial fermentation was complete. The hops and apricots do battle in the nose and flavor!  O.G. 1.048. F.G. was 1.010.
Dunkelweiss derived from unhopped Levitation wort.  I combined the runnings from 4lbs wheat and 2lbs Munich malt with the unhopped Levitation wort.  This was then bittered with Amarillo hops to give it a little more American feel and was fermented at 64F with a White Labs Hefe IV slurry.
Levitator Eisbock: Cold and 1st wort blend, fermented and lagered at cold temps and iced.
Took first runnings and finished cold wort, mixed the two and added two different sugars, boiled it, and fermented it with a house blend of Belgian style yeasts.  I call it (Stone) Leviathan.
COLD WORT - added candi sugar with bitter orange peel, fermented with WLP550 Saison yeast.
10 gallons of cold wort, added 1/2gallon H20, 1lb corn sugar, 2lbs dark candi syrup - fermented w/ WLP565 Saison @ 95F for 4 weeks to a gravity of 1.018, pitched champagne yeast and lagered for 2 weeks @ 53F to a final gravity of 1.007

RSVPing with the AHA ahead of time for
an accurate head count is appreciated.

STONE BREWING WORLD BISTRO & GARDENS:
FRESH II
MONDAY, OCTOBER 15th: 6pm
Stone Brewing World Bistro & Gardens invites you to experience a meal that in this day and age has all but been forgotten; a meal in which all items were picked, gathered, kegged, caught and/or killed THAT VERY DAY!  For most folks, such a meal usually requires toiling on the farm, stomping through the woods, or rowing a dingy out into the bay.  But there's no need to get your hands grubby or don your snorkeling gear this time, as we'll take care of that part for you.  All you need to do is show up and enjoy.

Now, how's that for fresh?

The "FRESH! II' dinner will be served "family style' amidst the splendor of our gardens where you can dine right alongside the farmers who produced the food themselves!  All the beers—and, oh yes, there most certainly will be fresh beer—to be paired with selected courses will have been either kegged or bottled earlier that day.

You'll never settle for a frozen TV dinner ever again.

We'd love to post up a menu ahead of time, but many ingredients are dependent on factors that come down to the morning of. We'll be as specific as possible beforehand, but rest assured - you'll be astounded.

For reservations, call the Bistro @ 760-471-4999, Press 1 and then Press 2 to reach the host stand.

The Stone 11th Anniversary Celebration was a great success! The Stone Crew, the Volunteers, the Guest Breweries and all you Beer Drinking Humanitarians helped crank this anniversary up to 11! The 11th page on the website has been updated with photos and a list of some businesses, organizations and people who need to be recognized for their generosity in lending their time, services and resources to make this event the best one yet. We couldn't have pulled it off without them, so be sure to raise a toast to them.

This list doesn't even mention all the great special growler fills, fantastic weekly casks, Lambic Sundays, and MORE that we have going on all the
time. Be sure to check the Stone Calendar of Events to stay up to date!
